Cava is the Spanish term for sparkling wine. These wines are done in the Traditional Method which means secondary bottle fermentation. It's the same method of making Champagne and it means that the wine is bottled still and the bubbles are formed in the individual bottle. This gives Cava (and Champagne) it's unique structure and taste. This Cava is made mostly from the indiginous Macabeo grape. It's light tropical and very easy to drink.
